We have a household of two people. That makes grocery shopping tricky and needlessly expensive. Few things come packaged for a couple. For instance, we just purchased hot dogs and buns. We got eight of each—four times as many as we needed. We either had to dispose of edible food or dine on the same meal day after day.
Tortillas are even worse. One taco night in our home barely makes a dent in a bag of tortillas. What’s a gentleman to do? The answer: breakfast tacos. Recently, we awoke hungry, opened our refrigerator, saw leftover street taco-sized tortillas sitting on the shelf and concocted a most delicious yet spontaneous home-cooked breakfast.
We enjoyed them so much that we fixed these breakfast tacos for dinner a few days later.
Breakfast Street Tacos
Ingredients
- 6 street-taco sized tortillas (wheat or corn)
- 6-8 ounces of lean hot turkey sausage
- 2-3 eggs
- 2 tablespoons of milk
- 1/4 cup of cheddar cheese
- 1/8 of a red onion, finely chopped
- 6 slices of avocado
- hot sauce, to taste
- Sour cream, for garnish
Directions
Whisk eggs and milk together. In a skillet, brown and drain sausage—drain skillet as well if greasy. In the same skillet, scramble eggs.
Assemble tacos in this order: tortillas, scrambled eggs, sausage, cheddar cheese, red onion, avocado, hot sauce and sour cream.
Makes 6 street tacos.

Seriously? Did you really say groceries for 2 people are expensive? Try buying groceries for 7, and 2 of them have special dietary needs due to allergens.
