Fizzy Peach Whiskey Cocktail

Spiked sparkling water is all the rage. We don’t dig it. We enjoy carbonated water, and we love liquor. For whatever reason, though, perhaps it’s trying to be too healthy, perhaps it’s an odd combination, perhaps it seems like an ill-fated fad, we disfavor spiked sparkling water.

We do respect something about it: how light and refreshing it tastes. Although we normally prefer a booze-forward, slow-slipping cocktail, we occasionally could use a little invigoration in our lives.

On a recent weekend afternoon, we felt experimental. We opened our refrigerator and pondered, “With what in here shall we craft a cocktail?” We spotted a fresh peach—one of this season’s last locally grown peaches. And, we concluded, “That’ll do.”

We pureed the peach and mixed with it whiskey, lemon juice, bitters and muddled mint. We added seltzer water, made in our SodaStream, and gave it a light stir.

This isn’t a cocktail for everyone. The puree gives it a pulpy texture. The drink doesn't pack a ton of flavor. Remember: it’s supposed to be light and refreshing—a goal that it achieves admirably.
