We issued ample warning; we’ve become waffle-crazed gentlemen. Ever since receiving a Smart Waffle Pro from Breville, Sunday has been designated “Waffle Day.” Thus far, sweet has dominated. Today, though, savory took its turn. We made sharp cheddar cornmeal waffles with fresh parsley.
Sounds delicious, right? They were. We constructed open-faced breakfast sandwiches with thick cut bacon and a sunny side up egg. Next time, we’re adding avocado. And, we’ll substitute honey for maple syrup.
Add these to the Sunday waffle rotation.
Sharp Cheddar Cornmeal Waffles with Fresh Parsley
Ingredients
- One cup of milk
- 1/4 cup of melted butter
- One tablespoon of apple cider vinegar
- Two eggs
- One cup of all-purpose flour
- 3/4 cups of cornmeal
- One teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of onion powder
- One loosely packed cup of sharp cheddar cheese, grated
- Two tablespoons of fresh parsley, chopped
Directions
Mix all ingredients except cheese and parsley until fully blended. Evenly fold in cheese and parsley into batter. Cook batter in a waffle iron.
We topped our waffles with thick-cut bacon and a sunny side up egg. We drizzled on pure maple syrup and garnished with parsley.
