Here’s an easy recipe for Lime Cilantro Hummus that we adapted from Blendtec’s Fresh Blends cookbook:
Lime Cilantro Hummus
Ingredients
- 2 tablespoons of olive oil
- 2 tablespoons of lime juice
- 1 garlic clove
- 1/4 teaspoon of paprika
- 1/2 teaspoon of salt
- 3/4 cup of fresh cilantro leaves
- A 15 ounce can of chickpeas, drained and rinsed
Directions
Put ingredients into a blender. Blend for 45 seconds. Scrape down jar walls. Add 1/4 cup of water if needed for proper consistency. Blend again for 30 seconds. Serve with tortilla or pita chips.
Yeah, simple.
