We don’t want to give you, our dear reader, a false impression. The truth is that we don’t know what we’re doing a portion of the time. We try hard, and trying matters. But we don’t have what one might call, “culinary training.” Our knife work lacks precision. Our technique proves wanting.
We’re ordinary home cooks who, as a humble hobby to help pass time, take photos of what we make and post recipes to the World Wide Web. Sometimes, our wife doesn’t even like our cooking, though, for the record, we enjoy the food she prepares—all of the time, every time.
If you’re like us, sushi is intimidating. We had never made it. Sushi seemed difficult, beyond us. We understood that it required bona fide skill. Then, we found a hack, a tool that empowers even knuckleheads like us to create beautiful sushi at home. It’s called a sushi bazooka. You read that correctly, a sushi bazooka. You should get one, if for no other reason than to own a sushi bazooka.
The contraption is a cylinder that opens longways. It has hinges on one side and locks on the other. Once open, you fill both sides with sushi rice, carve a channel down the middle, and layer ingredients in the channel. Next, you close the cylinder, place a cap on the end, and push the plunger to lightly compact what’s inside. After removing the cap, continuing to push the plunger will expel the sushi onto a sheet of nori, which you can perfectly roll.
This sounds too good to be true. Unlike buying a beginner ukulele and learning to play from YouTube, it’s not. The most difficult part? Sourcing sushi-grade fish. Whole Foods usually has sushi-grade salmon and sometimes sushi-grade ahi tuna. Our local butcher often carries more unusual options.
On a recent evening, we made three variations of sushi. The first was a variation of a Philadelphia roll with raw salmon, cucumber and avocado. The second was a spicy salmon roll, wherein we chopped salmon mixing it with spicy mayo. The third was a tempura shrimp roll. We cheated, buying frozen tempura shrimp and heating it in an air fryer.
