We have an issue with small kitchen appliances. That issue is that we love them. A lot. We collect them. We’ve got a Blendtec Blender and a SousVide Supreme and a Zojirushi Rice Cooker. Of course, they can’t all fit in our kitchen, so we’ve erected a bookshelf full of small kitchen appliances in our basement.
Judge us if you will, but we do use them. And, they help us amateur, at-home chefs cook good food. There is one, though, that has long eluded us. For a year or two, we’ve lusted after the Smart Waffle Pro from Breville. It seemed amazing—like a computer engineered for one specific purpose: to make delicious waffles. And, the people of the internet, those who used the Smart Waffle Pro and wrote reviews about it, heralded it as amazing. Their reviews are unanimously glowing. For example, one person wrote, “You won’t ever find a more perfect waffle maker! Good heavens…it’s worth every dime!”
We were very happy gentlemen when our significant other recently gifted us with a Smart Waffle Pro. It made our weekend and every weekend since that first weekend because we’ve become waffle-crazed devotees. Today, we made vanilla almond waffles with peach brown sugar compote. They were awesome, so in the spirit of generosity, we share the recipe with you, our loyal readers. You are a loyal reader, correct?
Peach Brown Sugar Compote
Ingredients
- 3 cups of peaches, peeled and sliced
- 2 tablespoons of brown sugar
- 1 tablespoon of lemon juice
- 1 tablespoon of water
Directions
Put the ingredients into a bread machine. Select the “jam” function, and let the device do all of the work. If you don’t have a bread machine, you can mix the ingredients in a saucepan and cook over medium heat for 15 to 20 minutes, stirring frequently.
Vanilla Almond Waffles
Dry Ingredients
- 3/4 cup of flour
- 1/4 cup of corn starch
- A teaspoon of sugar
- 1/2 teaspoon of baking power
- 1/2 teaspoon of kosher salt
- 1/4 teaspoon of baking soda
Wet Ingredients
- A cup of 2% milk
- 4 tablespoons of butter, softened
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
- An egg yolk
- Two egg whites, whipped
Directions
Combine the dry ingredients in a bowl. In a separate bowl, mix together all of the wet ingredients—except the egg whites. Slowly pour the dry ingredients into the bowl with the wet ingredients. Whip egg whites until soft peaks form. Fold egg whites into batter. Cook batter in a waffle iron.
Once done, top waffles with compote, sprinkle with powdered sugar and serve. This recipe makes about four waffles.
