Sour Cream Banana Bread in the Bread Machine

Let’s be clear: this isn’t the banana bread you instinctively think of when you hear banana bread. That’s cake. This ain’t cake. It’s bread with banana as an ingredient.

The banana and sour cream combine to form a moist, spongy texture. Those craving light and fluffy should look elsewhere. This bread is dense. It’s not ideal for sandwiches. But, it makes for a fine breakfast, adeptly carrying jams, Nutella, and nut butters from plate to mouth.

Sour Cream Banana Bread in the Bread Machine

Ingredients

  • 1/3 cup of water
  • 1 cup sour cream
  • 2 tablespoons of honey
  • a ripe banana
  • 3 cups of bread flour
  • ¼ cup of cornmeal
  • 1 ½ teaspoons of salt
  • 1 ½ tablespoons of vital gluten
  • 3 teaspoons of active dry yeast

Directions

We at G@H own a Zojirushi Home Bakery Virtuoso, but this recipe will work with any bread maker. Add the liquid ingredients to the bread pan followed by the dry ingredients. Form an intention in top center of the dry ingredients for the yeast. Use the machine’s basic cycle.

    I do not have access to vital gluten….will this turn out OK without it?

    This did not turn out like the description.
    It was not dense and was very light and fluffy.
    The recipe was too big for my regular machine, but I’m glad I tried it.
