We almost ruined tacos. By we, we don’t refer directly to G@H. We mean society. Society almost ruined tacos. By tacos, we don’t refer directly to the tacos pictured here. These tacos are perfectly fine (better than that, actually). We mean the dish that includes a tortilla folded around a protein filling, usually a type of meat. BTW, try to develop a better definition of taco; it ain’t so easy. Do they all have salsa? No. Do they all have lettuce? No.
Fast-foodization has transformed authentic, traditional tacos into greasy, heavy, fatty, cheesy monsters. But, that attributes to nurture, not nature. Tacos needn’t be belly-bloating. Tacos can be heathy and fresh and crisp and delightful.
This weekend, we yearned for something light but full of flavor. We wanted a taco—a shredded chicken taco. More precisely, we wanted several shredded chicken tacos. Our Instant Pot, per usual, handled the heavy lifting. Do not sleep on that homemade pico de gallo, though. Tomato. Onion. Jalapeno. Corn straight off the cob. Lime juice. Fresh mint and parsley. #yummy
Shredded Chicken Tacos using an Instant Pot
Ingredients
Shredded Chicken
- Two tablespoons of olive oil
- Three chicken breasts
- Barbecue rub, to taste
- One cup of chicken stock
Pico De Gallo
- Two Roma tomatoes, diced
- 1/4 of an onion, diced
- One jalapeno, finely chopped
- 1/2 cup of kernel corn
- Half of a lime, squeezed
- Fresh mint and parsley, to taste
Other Ingredients
- Ten tortillas
- Lettuce, chopped
- Half of an avocado, sliced
- Cheese, grated
Directions
Coat chicken with barbecue rub. Add olive oil to pressure cooker. Turn pressure cooker to “Saute” function. When hot, add chicken breasts. Brown chicken breasts on each side. Turn off pressure cooker. Add chicken stock. Cook on “High Pressure” for 17 minutes. When done, release pressure. Remove chicken and shred it. Add 1/2 to 3/4 cup of liquid remaining in pressure cooker to shredded chicken.
Mix together pico de gallo ingredients. In a hot cast-iron skillet, toast tortillas. Stuff tortillas with shredded chicken. Top with pico de gallo, lettuce, avocado and grated cheese.
Makes ten tacos.
