Creamy Spinach Dip that Packs Some Heat

Ask anyone who knows us: our personalities are somewhat obsessive. Right now, we’re leaning heavily on our Blendtec Blender. It does everything. Well, actually, it only does one thing. It blends, but it blends really, really well. And, blending things is fun.

We enjoy making dips because we enjoy eating dips. Our friends, they too enjoy eating dips. And, they praise our dip-making skills. And, their praise makes us feel proud and validated.

This week, we had another dip success, which we’re pleased to share with our loyal readers. Here’s our recipe for Creamy Spinach Dip. We adapted it from Blendtec’s Fresh Blends cookbook. Warning: it packs some heat.

Creamy Spinach Dip

Ingredients

  • 1 tablespoon of olive oil
  • 2 cloves of garlic
  • 4 cups of fresh spinach
  • 2 hot peppers of your choice
  • 3/4 cup of Greek yogurt
  • 4 oz low-fat cream cheese
  • ¼ of freshly grated parmesan cheese

Directions

Roughly chop garlic and peppers. Add olive oil, garlic, and peppers to pan and sauté for 3 minutes. Add spinach to pan and sauté until spinach wilts. Remove from heat.

Blend Greek yogurt and low-fat cream cheese together. Add sautéed ingredients and parmesan cheese to blender and pulse fives times.

Serve with pita bread or tortilla chips.
