Chocolate and Butterscotch Mixed Nut Bars – Sweet and Salty, Kinda Like Us

We’re savory gentlemen. We rarely make dessert, but when we do, we get serious.

Peanut butter is the best. It makes us happy. Sometimes, we eat it by the spoonful. Recently, when our other asked us to make dessert, we said, “On one condition; it’s got to have peanut butter. A lot of peanut butter.”

After much research and contemplation, we decided to make peanut butter bars. We can’t leave a good thing well enough alone, so we tossed in walnuts, almonds and Macadamia nuts. If we had more nut varieties, we’d have thrown in those too. And, though chocolate is good, chocolate mixed with butterscotch is far superior.

The result? Crunchy. Satisfying. Decadent. Tastes like a fancy-pants peanut butter cup.

Chocolate and Butterscotch Mixed Nut Bars

Ingredients

  • Two cups of crushed graham cracker
  • One cup of peanut butter
  • Five tablespoons of melted butter
  • Three tablespoons of honey
  • 1/4 cup of chopped almonds
  • 1/4 cup of chopped walnuts
  • 1/4 cup of chopped Macadamia nuts
  • 2/3 cups of semi-sweet chocolate chips
  • 2/3 cups of butterscotch chips

Directions

In a bowl, mix together the graham cracker, peanut butter, melted butter, and honey. Fold in the almonds, walnuts, and Macadamia nuts. Spread the mixture across bottom of an ungreased eight-inch square glass pan. In another bowl, microwave the chocolate and butterscotch chips until melted. Stir to swirl. Pour onto top of the nut mixture, and distribute evenly. Place pan in refrigerator to cool.
