Jalisco Mule made with Pasote Reposado Tequila

Is tequila itself refreshing? Or is it that the ingredients which mix well with tequila offer the antidote to summer swelter?

Does it matter? Not really. Chicken. Egg. Whatever. We do know this: a tequila cocktail makes the perfect companion on a July evening. Scratch that. Good friends and abundant tequila cocktails are the perfect companions on a summer evening.

On a recent such occasion, we needed to concoct some adult beverages without making a supply run. We surveyed our stocks and saw ginger beer a plenty. It goes with whiskey, gin and rum. It’s got to go with tequila, right?

We added lime juice, blue agave sweetener, a dash of bitters and a cucumber slice. Turns out, tequila and ginger beer pair swimmingly. We had several servings. We need a little extra coffee this morning.

We dubbed our drink “Jalisco Mule.” See, authentic tequila like Pasote Reposado comes from the Jalisco Highlands of Mexico. Substitute Jalisco for Moscow. That’s catchy and cute. We were very proud of ourselves. We later did a Google search. Turns outs, we weren’t the first geniuses to pen the name. Huh. The recipe, though, is authentically ours.

Jalisco Mule

  • Two ounces of Pasote Reposado Tequila
  • One ounce of lime juice
  • One tablespoon of blue agave sweetener
  • A dash of bitters
  • Two ounces of ginger beer
  • A cucumber slice

In a cocktail shaker, mix tequila, lime juice, blue agave sweetener and bitters. Shake well. Remove top. Add ginger beer. Stir gently. Pour in over ice. Add a cucumber slice.

In these photos, you see the cucumber as a garnish. But, insert it into the drink because it adds a pleasant, seasonal flavor.
